Basic Doughnuts with chocolate glaze

Hey! This is my first post and my very first recipe, so thought of starting with the basics. Doughnuts has always been my favorite and I love store bought doughnuts and thought of giving them a try at home! So after referring to hundreds for recipes from books and several websites, I have come up with own !
This is a simple egg less(i turn most of the recipes to vegan) recipe for doughnuts, I fried them (didn’t tried baking so not sure if it suits baking procedure well) .

The recipe yields 15-18 small doughnuts.

Ingredients:

(for the dough)

  • ·         All purpose flour – 500 gms
  • ·         Sugar – 4-5 tbsp(that's totally upto your taste, I kept it moderately sweet)
  • ·         Butter – ¼ cup
  • ·         Milk – 60-70 ml
  • ·         Yeast – 1tsp

   (for the glaze or topping)


Sugar glaze -
  • 2 cups powdered sugar
  • 1/4 cup milk

chocolate glaze
  • dark/milk chocolate compound - 100 gms
  • fresh cream - 100 ml

Method:

  • Take lukewarm water, add yeast to it and keep it in warm place to ferment for about 6 - 8 mins(depending on the temp.) , Delhi's summer doesn't require more than 6 mins.
  • Mix the other(APF and powdered sugar) dry ingredients(a pinch of salt can also be added to enhance  the taste) in a separate , clean bowl. Add butter to it and rub the butter well in the dry mixture, do not use melted butter, only room temp. butter should be used.
  • After combining butter and dry ingredients well, make a well in the center, add fermented milk to it. Knead the dough well till it turns soft, add more milk if required! The dough shouldn't be too heavy or too runny.
  • Let the dough prove for about half an hour(again depending on temp.), it'll double up in volume.
  • Now, when the dough has risen enough, it means that enough CO2 is formed, and you have to knock it out of the dough, so knock back the dough and re shape the dough(dont knead for too long). 
  • Cut with the cutter in the desired shape. fry in oil(medium heat), until golden brown.
NOW FOR THE GLAZE

  • Mix the milk and sugar together to make a flowy glaze, dip donuts or coat them fully in the glaze.
  • For the chocolate glaze, heat the cream, add chopped chocolate and mix well. Dip donuts in the glaze.
  • you can add a little variation to the glaze and toppings, coconut flakes, whipped cream , oreo glaze( soon will be uploaded) are so common nowadays!
  • you can also make donut holes OR whole doughnuts filled with exciting creams, jams etc.! just be creative and go give it a try!
  • Enjoy your doughnuts, impress your friends and satisfy your food cravings! 


**IMPORTANT TIPS: **

  • Use all the ingredients at room temperature.
  • Allow the dough to prove and rise in a warm place. make sure not to under prove(the doughnuts will be dense) or not to over prove the dough.
  • Use fresh ingredients for best result.
  • Fry the doughnut in correct temp. high temp will not let them cook from inside and low temp wont give a perfect doughnut.
  • After cutting the doughnut in desired shape, do not wait for too long to fry them, or it will start producing CO2 again.

Baklava shots

This is an easier and super simple version of baklava my grandmom told me, it actually isn’t a baklava but it definitely gives a shot of flavor of the same!! With all the love and happiness here is the recipe of super easy baklava bites!! INGREDIENTS:  120 grams Sewai (rice vermicelli) 180-200 grams sweetened Condensed milk 2-3 tbsp Desi ghee Pistachio Almonds Saffron strands METHOD: Chop all the dry fruits and lightly dry roast them. Dry roast vermicelli (break them if they are too long) until golden in color. Add ghee and stir properly. Remove from flame. Add condensed milk and stir properly until combined well. Scoop out and garnish with dry fruits. 

Vodka Haze

This is my first cocktail recipe. Well, my college life is sure shot very interesting and the things I learn from each day there are way more than interesting. This is what I made in my cocktail competition. This super refreshing vodka based drink is as amazing as my desserts <3 Here’s what you need: Vodka: 30 ml Coconut water: 30 ml Soda: 40 ml Lime juice: 5 ml Blue Curacao: 10 ml Mint leaves: 3 to 4 no. Cucumber: 1 no. A shaker And a glass for serving (I did with margarita) And a melon scooper for garnish ( optional) Let’s get started: In the shaker, add cucumber cubes and mint leaves and muddle it. Add vodka, lime juice and coconut water in the shaker ( don’t forget the ice cubes). And shake well. Transfer to the glass, add soda to it. Add blue Curacao and let it settle at the bottom Scoop out balls from cucumber. Thread them in the skewer. Serve. Stir before consuming.
